If it's a ministerial function, such as a baptism, house/car/whatever blessing, marriage, usually you give the priest money in a discreet envelope. That's how we roll. Also, for house blessings, we always try to have some coffee and pie (or some kind of light dessert dish that complements the java) available. So I guess it's really a matter of occasion.
